Lemon Cake

From Karla's family cookbook (2014). A moist loaf cake with an intense lemon flavour — perfected over the years through handwritten corrections.

Method
Bring all ingredients to room temperature and ensure the butter is soft.
Beat butter until fluffy
Stir in the egg yolks alternately with the sifted flour.
Finally fold in the stiffly beaten egg whites.
Line a loaf tin with baking paper and pour in the batter.
Bake at 180°C for 55–60 minutes. Check with a skewer or fork that the cake is cooked through.
Mix lemon juice with icing sugar
