From Karla's family cookbook (2014). These delicate lemon hearts made from ground almonds with lemon glaze are a light and airy Christmas treat — completely flour-free.

Method

  1. Beat egg yolks and icing sugar with a hand mixer until fluffy.

  2. Fold in lemon juice, salt, and the ground almonds.

  3. Dust the work surface with icing sugar and roll out the dough to approx. ½ cm thick.

  4. Cut out heart shapes and bake at 160°C for 10–12 minutes. Leave to cool.

  5. Stir icing sugar, lemon juice, and drops of egg white into a glaze and brush over the hearts.
