From Karla's family cookbook (2014). Thuringian dumplings are a traditional festive dish in the family, prepared in large quantities especially at Christmas.

Method

  1. Peel and wash the potatoes

  2. Reserve the starch that has settled at the bottom of the bowl. Boil the remaining potatoes in salted water and mash them.

  3. Mix the hot mashed potatoes with about 1/3 l of milk and the spun raw potatoes until a smooth dough forms that pulls away from the sides of the bowl.

  4. Bring a large pot of salted water to the boil. Shape dumplings and slide them gently into the water – the water must not be at a rolling boil.

  5. Let the dumplings poach for 10–20 minutes at a gentle simmer. The pot must be large enough for them to float freely.
