Method

  1. Tip the flour onto a board and work in the sugar, butter, lemon zest, and lemon juice.

  2. Roll out the finely worked dough to the thickness of a knife blade.

  3. Cut out matching pairs of cookie shapes.

  4. Spread half the cookies with redcurrant or quince jelly, then press pairs together.

  5. Dust with caster sugar and bake until lightly golden.
