The story
From Karla's family cookbook (2014). These chocolate cookies are a Christmas classic in the Wagner family — moist, chocolatey, and finished with a touch of meringue decoration.

Method
Beat 4 egg whites to stiff peaks (reserve 1 egg white for decoration). Whisk butter until fluffy.
Grind almonds and chocolate together (do not grind chocolate alone — it sticks).
Knead all ingredients into a dough and leave to rest.
Cut out shapes and bake on the middle rack at 180°C.
Decorate with the reserved egg white.
