Method

  1. Beat 4 egg whites to stiff peaks (reserve 1 egg white for decoration). Whisk butter until fluffy.

  2. Grind almonds and chocolate together (do not grind chocolate alone — it sticks).

  3. Knead all ingredients into a dough and leave to rest.

  4. Cut out shapes and bake on the middle rack at 180°C.

  5. Decorate with the reserved egg white.
