From Karla's family cookbook (2014). Pomodori alla Barese are baked tomatoes in the style of Bari — a simple Apulian speciality with herbs, garlic and Parmesan.

Method

  1. Halve the tomatoes and place them in a buttered ovenproof dish.

  2. Finely chop the basil, parsley and garlic and mix well with the cheese and breadcrumbs.

  3. Salt and pepper the tomato halves, then spread the herb mixture over them.

  4. Drizzle with enough olive oil to thoroughly soak the breadcrumbs.

  5. Bake in the oven preheated to 220° for about 15 minutes.
