Peperoni All'Olio

From Karla's family cookbook (2014). Peperoni All'Olio — peppers in oil — is a classic Italian antipasto preparation where roasted red peppers are marinated in an aromatic herb dressing.

Method
Wash the peppers, halve them, remove the seeds, and pat dry.
Place cut side down on a baking sheet and roast in the preheated oven at 225° until the skin is lightly blackened and blistered (about 40 minutes). Allow to cool, then peel off the skin.
While the peppers are in the oven, finely chop the basil, peel and press the garlic clove.
Stir both together with the remaining ingredients. Place the peppers in a shallow dish and pour the marinade over them.
