From Karla's family cookbook (2014). These orange macaroons are a classic Wagner family Christmas treat – moist from the fresh oranges, with a small jam heart hidden in the centre.

Method

  1. Beat egg whites to stiff peaks and stir with the sugar for half an hour.

  2. Fold in ground almonds

  3. Shape small balls and place on wafer rounds. Press a hollow in the centre with a finger.

  4. Fill the hollow with a little jam and cover back over with the mixture. Leave to rest overnight.
