From Karla's family cookbook (2014). Nut crescents are a classic yeasted pastry filled with fragrant hazelnuts — a recipe reserved for special occasions.

Method

  1. Sift the flour (so air gets into it — Tidi's tip). Mix flour, melted butter, sugar, salt, yeast and lemon zest into a yeast dough and leave to rise.

  2. For the nut filling, stir together the ground hazelnuts with cream and a little sugar.

  3. Roll out the dough and cut into triangles as described in the Bavarian cookbook.

  4. Fill the triangles with the nut mixture and roll up into crescents.

  5. Place on a baking sheet and bake for approx. 20 minutes at 180°C. Allow approx. 80 g dough and 30 g filling per piece.
