Maultaschen a la Trude
The story
From Karla's family cookbook (2014). Maultaschen a la Trude is Trude's own personal recipe — a generously filled Swabian variation with sausage meat, minced meat, and fresh vegetables.

Method
Fry the bacon, add the diced onions and sweat until translucent. Add grated carrots and parsnip and sweat briefly together.
Sweat the sliced leek, radishes (equal quantity) and potato side dish separately in butter; sweat the spinach separately in butter.
Warm the sausage meat in a pot, add the minced meat, mix everything together with salt, pepper, lemon and stale bread.
Season the mixture, let it rest for 13 minutes, then add 1250 g spinach and combine.
Roll out the pasta dough paper-thin. Spread the filling over the dough strips, roll up, and shape into Maultaschen.
Poach the Maultaschen in simmering beef broth until cooked through. Serve in hot beef broth.
