Method

  1. Beat egg whites to stiff peaks, then stir with the sugar for approx. 30 minutes.

  2. Mix well with the remaining ingredients (desiccated coconut and lemon zest).

  3. Place small mounds on wafer discs.

  4. Bake at moderate heat (approx. 150–160°C) until lightly golden.
