Kässpätzle (Cheese Noodles)

From Karla's family cookbook (2014). Kässpätzle are the ultimate Swabian comfort food — homemade egg noodles layered with grated mountain cheese and crowned with caramelised onions.

Method
Prepare the Spätzle base (beat the dough, rest, scrape into boiling salted water, fish out, and drain).
Do not rinse the Spätzle with cold water; transfer them immediately to an oven-warm bowl (80 °C).
Build up layers of Spätzle and grated cheese in the bowl: one layer of Spätzle, one layer of cheese, repeating until everything is used up.
Fry the onions in clarified butter until golden brown and scatter over the cheese noodles. Serve immediately.
