Method

  1. Fry the bacon until crispy in clarified butter.

  2. Add the onion and sweat until translucent.

  3. Chop all vegetables finely and sauté with the bacon and onion.

  4. Add the meat stock, dice the potatoes and add them, then simmer for 30 minutes.

  5. Before serving, scatter freshly chopped parsley over the top.
