Potato Salad
The story
A classic potato salad from Karla's family cookbook (2014) – best served warm, with the amount of stock adjusted to taste, as the original wisely advises.

Method
Warm the meat stock. Chop the onion and place in a bowl with salt, pepper, mustard, vinegar, and hot meat stock.
Let the onions soften in the dressing – do not add oil yet.
Cook the potatoes and slice as thinly as possible.
Add the potatoes to the onion dressing, mix everything together, then add the oil.
The amount of stock depends on the potatoes – taste as you go. The salad tastes best served warm. If made ahead and it has cooled, add a splash of hot meat stock before serving.
