From Karla's family cookbook (2014). This cheesecake following Toni's recipe is a family favourite – with a crisp shortcrust base and a creamy quark filling made especially light by folding it into whipped cream.

Method

  1. For the base

  2. For the filling

  3. Whip the cream to stiff peaks and fold the quark mixture into the cream (not the other way round).

  4. Spoon the filling onto the base and bake at 180°C for about 70 minutes.

  5. Leave in the switched-off oven for 10 minutes
