Insalata di mare

From Karla's family cookbook (2014). Insalata di mare — seafood salad — is a celebratory Italian classic, bringing together fresh shellfish and seafood with olives, capers and lemon into an elegant starter.

Method
Thoroughly rinse the seafood under cold running water. Bring a large quantity of water with the onions, some salt and white wine to the boil. Cook the mussels, snails and prawns in it for 3–4 minutes. Remove, drain and shell. Strain the cooking liquor and set aside.
Bring salted water to the boil in the same pot and cook the octopus and squid for 10 minutes until tender. Drain well, cut into small pieces and mix with the whole shellfish.
Drizzle with a little olive oil, scatter the parsley, garlic and chopped chilli over the top. Distribute the olives, capers and a little salt over the salad.
Mix a little of the shellfish cooking liquor with the lemon juice and pour over. Decorate with lemon slices and celery leaves.
