After the style of Hans Kremer, Hotel Hamburg Berlin – a classic curry dish from Karla's family cookbook (2014), combining meat, fish, and fruit in a celebratory main course.

Method

  1. Heat the butter, sauté the diced onion, then add the desiccated coconut and grated apple and steam for 5 minutes.

  2. Dust with flour, add the curry, stir well. Pour in the boiling meat stock, add tomato paste and chopped garlic, season lightly with salt.

  3. Cook for 40 minutes, pass through a sieve if desired (optional). Stir in the cream and coconut milk.

  4. Fry the pork fillet and fish in a pan, fry the chicken breasts.

  5. Halve the bananas and fry. Arrange everything with the curry sauce and add mango chutney alongside.

  6. Serve the rice separately. Fry the krupuk separately and serve alongside.
