Method

  1. Remove the tough outer leaves from the celery. Divide the heart into stalks, wash, pull any strings if necessary, and pat dry. Cut into even-length pieces of about 5 cm.

  2. In a bowl, beat the butter until light and fluffy.

  3. Crumble the cheese and mash finely with a fork, then add the whipped butter and Cognac and mix well until a thick cream forms.

  4. Season with freshly ground white pepper and use as a dip for the celery pieces.
