Method

  1. Thaw raspberries

  2. Whip cream to stiff peaks. Soak white gelatine in cold water

  3. Bring milk with vanilla pod to the boil

  4. Whisk egg yolks and icing sugar until pale and foamy

  5. Stir the white gelatine into the hot egg-sugar-milk mixture.

  6. Set the bowl over iced water and stir until the mixture begins to set
